Another fantastic and inspirational site I must credit for this recipe
While making my hazelnut and raw cacao tart, I knew it was going to be so rich that it needed something a little citrusy to just refresh the palette - well this super creamy and citrus orange ice cream was made for that job!
With only 4 ingredients it's so quick and easy to make and has no refined sugar, dairy or gluten/eggs in so really you could say - it's a winner!
For this recipe I used the following ingredients
1 x Creamed coconut sachet (made up to 1 cup with warm water)
3 - 4 large frozen organic oranges cut into chunks
1/4 cup of Rude Health Almond Milk (fab product free of any synthetic stabilisers)
2-3 TBS of maple syrup (Check out our new organic 'Acadian Maple' Canadian grade A Number 2 - providing the ideal unrefined sweetness)
2 tsps of Vanilla Bean Extract (optional) Personally I added over a tablespoon because I love the vanilla extract we use, it is in a large brown bottle, it's organic and fair-trade, is thin in consistency but boyo does it have a taste pay off! For vanilla junkies like me - this product is heavenly! (see pics below)
Cut oranges into chunks, add all ingredients into a food processor and mix up until you have the right consistency, then serve immediately!
What could be simpler?
